Human civilization isn’t the only thing that started between the Euphrates and the Tigris rivers. Calzones, samosas and empanadas share the common ancestor of the Samboosak. Samboos-what? Samboosak. While it’s originally a savory pastry, there are many varieties throughout the Middle east, both salty and sweet. We’ll be making the Iraqi version, filled with generously spiced chickpeas and an additional filling as well.
